Recipe: Sprout & leek salad for winter

A cheap, quick, pretty, and delicious salad to boost your winter vitamin intake.

Finely slice raw brussel sprouts (with a sharp knife or the fine slicer blade of a food processor) and a raw leek - about one part leek to three parts sprouts. The shredded sprouts expand to make a lot of volume - about 8 sprouts and a small leek are enough for two people. Some chopped fresh parsley adds colour and combats smelly breath from the raw leek.

Make a dressing with mayonnaise and fresh (or bottled) lemon juice. If you want it a little less rich, mix in some creme fraiche or single cream. Be generous with the lemon juice. Mix together thoroughly.
That's it! Much liked even by those who don't like cooked sprouts (including me).
