Tasty soup - also great for loosing weight

This soup can be cooked in large volumes. If you want to lose weight, you can keep the soup in the fridge and take portions out for lunch or dinner, whatever you feel like. But you can also freeze the soup by portions and exchange it for one meal a day. You can eat as much soup as you like until you are full.

Ingredients:
3/4 cup onions cut in rings
1 garlic clove
1 bay leave
3 1/2 cups chicken breast, cut in small pieces
1 1/2 cups carrots sliced
2 cups broccoli
2 cups zucchini
1 ¼ cups peppers, cut in small pieces
1 ¾ cups of tomatoes
2 ½ cups pumpkin out of the can or glass
(pumpkin needs to go into the soup, otherwise the soup does not taste as great without it)

How to prepare it:
Put 1 tablespoon of oil into a pot and sautee the garlic and onions. Pour 1.5 litre broth into it and let it boil. Add the meat and the bay leave and cook it for about 12 minutes with the lid on.
Add all the veggies, and cook for another 5 minutes. Add salt and pepper to your liking. Done.

It is a bit of work, but it helps and tastes delicious.
